Popover Recipe

One of the easiest and tastiest things to make is a popover. I first had these at BLT Steak and a few months back, had them at Sbraga. So when I saw a popover pan at a store, I knew I had to pick one up and give it a go. And the recipe was so simple, that really - the first time was the charm.


What do you need? The ingredients to mix are as follows: 3 eggs, 1 1/2 cups all-purpose flour, 1 1/2 cups milk, 1/2 tsp salt, 1 tbsp unsalted, melted butter, and any type of cheese you'd like to top and immerse the popover with (Gouda and Parmesan are great choices). Heck, feel free to add a dash of truffle oil if that's your style! 


After filling your popover pan to the line, bake for 15 minutes at 450 degrees. Then drop the oven down to 325 for approximately 20 to 30 minutes, or until golden brown.


Make sure to be patient - these popovers will pop over in the final minutes of the baking process! 


Seriously - don't open that oven! 


After taking them out of the oven, I like to sprinkle a bit of sea salt, pepper, and some extra cheese! 


And then it's all about digging in. Fluffy, airy, cheesy, and light with a crisp outer crust. Enjoy!
